The Ategi is a small piece with a specific job — and without it, the Picklestone system doesn't work the way it should.

In traditional Japanese tsukemono-making, the pressing weight never rests directly on the vegetables. A round disc — the ategi — sits between them. It spreads the stone's weight evenly across the surface, and prevents the cold Aji stone from making direct contact with the vegetables, which would risk freezing them where the stone touches.

This replacement Ategi is cut from hinoki cypress — the same wood used in Japanese baths and shrines for its durability, moisture resistance, and gentle fragrance. It's a humble piece. But it carries the full logic of traditional Japanese pickling in its shape, and it makes the difference between a stone pressing correctly and one pressing unevenly.
