Picklestone220 is our largest kit — designed for households that want tsukemono on the table regularly, or for anyone who ferments in batches and keeps a jar always ready in the fridge.
The name tells you what's inside. At the center of the Picklestone220 is a 220-monme Aji stone — approximately 825 grams of genuine granite, sourced from Mure, Kagawa Prefecture. This is the same stone used in Japan's Imperial palace gardens and the landmark sculptures of Isamu Noguchi. Its density is the point: pressing harder and more evenly than glass or rubber, the Aji stone draws moisture from vegetables with quiet consistency. Its natural coolness preserves the flavor and crunch of your pickles from the inside out.
Resting between the stone and your vegetables is the Ategi — a round disc of hinoki cypress. Traditional tsukemono-making has always placed this piece between weight and vegetable, to distribute pressure evenly and prevent the cold stone from freezing direct contact with the food. That same logic, unchanged, is built into every Picklestone.
